- Lemon and artichoke heart risotto
- Asparagus and gruyere risotto
- Mushroom and eggplant lasagna
- Mushroom stroganoff with egg noodles (can easily be made with steak cubes)
- Stewed lentil and tomatoes with sweet potato hash
- Creamy mac and cheese (add lobster for a more decadent meal)
